Gnocchi – One-pot meal

We all are looking for a one-pot meal. Gnocchi is perfect as a one-pot meal. This is my Lockdown recipe.

Gnocchi is an Italian dish. Normally, it is always made with eggs but here I am sharing the eggless recipe of gnocchi. It is served with different sauces. I am sharing here the red basic Pasta Sauce. I love the combination.

What is Gnocchi? It is a small dumpling made out of a mix of Potato, Refined flour, cheese, and herbs. It is not Pasta. In Italy, it is served as a first course at many places.

Well, it is being said that the word Gnocchi came from the word Nocchio which means know in the wood. It is a traditional Italian dish which is quite old and probably it was introduced during Roman times. Roman legions introduced it during the expansion of the empire in the European Continent. At that time, they used Semolina to make the dough mixed with eggs. Using Potato arrived a little late.

Potato gnocchi is very popular at particular parts in Italy.

Sharing the recipe that I tried during Lockdown.

Ingredients for Gnocchi(dumplings)

  1. 2 Mashed Potatoes (Boiled – I pressure cooked it. Don’t forget to add salt to it. If it’s a little overcooked you can balance it with Cheese and flour )
  2. 1/2 cup of Refined flour (mainly to adjust the consistency )
  3. Grated Cheese
  4. Salt
  5. Oregano
  6. Black pepper
  7. pinch of Baking Pd

Ingredients For Red Basic Pasta Sauce

  1. 2 cups of Tomato Puree (Boiled in hot Water after giving a slit . Peeled, crushed, and strained )
  2. Olive oil
  3. Garlic paste
  4. Salt
  5. Cream

Coriander to sprinkle over it (optional)

Method for Gnocchi

1.Take a deep bowl, Add Mashed Potatoes, refined flour, cheese, salt, black pepper, and baking powder and make a soft dough.

2.Roll it in thin long rolls and cut it into equal pieces

3.Press it on the fork (the most important process of Gnocchi)

4. Take a big Pan and add water to it to boil the dumplings. Add salt according to your taste and Olive oil and allow it to boil.

5. Once the water starts boiling, add some dumplings into the water. Don’t add all of them at once. Add in the bunch of 4 to 5 and allow them to cook for approx. 5 mins on medium flame. You can check them after removing them carefully from the water. Check the texture, it should not be sticky. It should be half-cooked.

6. After all the gnocchi are boiled well put it on the side .

Method to prepare Red Basic Pasta Sauce

1. Take a big pan .Add Olive oil and allow it to heat .

2. Add Garlic paste or chopped garlic(what i prefer) and sauté for a minute.

3. Add tomato Puree ,salt and herbs in it . Let it cook for sometime until you see it started boiling .

4.Add Cream in it mix well and cook for 2-3 mins for the creamy texture.

5. Now add half cooked gnocchi in the sauce and let it cook for 3 to 4 mins. After you see the boil. Remove it from the flame.

Serve it hot and sprinkle the coriander . That’s how I like to eat .

TIP:

Don’t overcook the Dumplings in the water .

Don’t forget to add it in the bunch and not all of them together .

Variations :

You can use White sauce, pesto also or just sauté gnocchi in the garlic and add some cheese over it before serving.
