Kaju Katli

An Indian sweet which is very popular on occasions like Diwali and Rakshabandhan. This recipe is being shared by one of our readers. So easy to try and simple, you need to take care of the syrup that you make.

How to make kaju katli Step by Step

Blend the Cashewnuts in a mixer to make a smooth mixer. Using the Cashews at room temperature. Try to blend it with the breaks as the heat can change the flavor.

Put the Cashewnut mixer aside for some time.

Take a broad non-stick pan to make a syrup.

Combine water and sugar in it and mix well. Cook on a high flame till the sugar dissolves and forms one string consistency, it will take approx. 10 mins.

Put the pan on a medium flame and then mix the Cashew mixer in it slowly and keep mixing it to avoid the lumps in it.

After mixing it properly take out the mixer on a Plate and allow the mixer to cool down for at least 45 mins. Try to use the Butter paper so that you can easily remove the mixer later on.

Once it is cooled scrape the mixer of Kaju katli with the help of a flat ladle and knead it properly to make a smooth dough.

Now you need a flat surface and steel Thalis are the best, turn backside and Grease it with Ghee. Flatten the dough by rolling it with the help of a greased roller (belan). Keep lifting the dough to avoid sticking to it.

Ready to cut into the shape of Diamonds.

Kaju Katli is ready.

Most important point: Don’t over blend the Cashews, it turns oily and you can’t make Kaju katli out of it.
