Surati Ghari – very famous sweet from Surat​ .

Ghari is a very famous sweet from Surat. People consume on a day called Chandani Padva. It is loaded with ghee. It was made first in somewhere around 1830s. It is said that Ghari was made for Tatya Tope to give extra strength to fight in 1857.

Here is my Mother sharing her recipe . She makes amazing Ghari .

Ingredients :

Here I don’t have the picture of Mawa but that is most important ingredient in Ghari .

1.Refined flour 2. Ghee 3.Powdered Sugar 4.Cardomom 5.Saffron mixed in warm milk 6.crushed Pistachio 7.Gram flour 8.crushed Almonds

For Dough :
  1. 300 gms refined flour
  2. 3 to 4 tsp ghee
  3. Milk as required
For Stuffing :
  1. 500 gms fresh Mawa
  2. 50 gms Gram flour (thick flour )
  3. Crushed nuts (almonds, pistachio, cardamom )
  4. 300 gms powdered sugar
  5. 2 to 3 tsp of ghee
  6. Saffron with warm milk

Method :

  1. Mix the ingredients to make the dough. Knead it well and soft with Milk. cover it with a moist kitchen towel and keep it on a side for a minimum of 2 hours.

4. Take a very small bowl (which is for appetizers or dips ) Put a stuffing in it press it well and then turn that on the puri .

5. Gather all the sides and close it like a Kachori .

6. Take a Pan and pour a Ghee in it to deep fry the Ghari . Place it like this and then fry the ghari .

7. After Deep frying all the Gharis , Dip all them one by one in the Ghee (normal temperature )

8 . Take out in a different plate .

9. Repeat this with all the Gharis and put in a big plate. Allow them to rest in the fridge for some hours until you see the Ghee is frozen. You can see in the image below how it starts looking

10 . Take out from the Fridge and Garnish with Pistachio .
