Shrikhand – a word is enough​ !

This is my our first food blog. We thought of sharing my recipe as it is first. Sharing here the recipe of Shrikhand. It is very popular in Maharashtra and Gujarat.

It is also consumed a lot during Navratri, as it is also considered as a Faral food. We are sharing here one by one step to follow and with the help of graphics, you can easily follow it. It is very easy and fast to make, you just need a little bit of time and confidence for sure hahaha.

Ingredients

  • 500 gms of Thick Curd (fresh and preferably full -fat )
  • 3 – 4 Tbsp of Sugar (also depends on your taste )
  • 1 to 2 tsp of warm milk
  • Saffron as required
  • Cardamom as required

method :

  1. Take a deep bowl ,put a strainer on it and put a muslin cloth over it . Use a thin cloth .
  • Put the Curd /Dahi over it. Here I have used Greek Yoghurt as I love it and felt like it will give a better taste. It will be more creamy compared to others.
  • Take all the sides of cloth and close it just in a way as shown in a picture .
  • Make it tight or just tie the cloth.
  • Put another bowl just like an image above and put it on a side for a minimum of 3 hours. It is very important to remove water which is known as Whey from the Curd to make Shrikhand very creamy and thick.people also keep it overnight. I kept for 3 to 4 hours before making Shrikhand
  • This is how it looked after 3 to 4 hours. This is called Hung Curd. If your curd is still not thick and has water in it, you have to put it on the side again. I took almost one big cup of Curd and it reduced so much you can see in the result.
  • You can see how thick it looks .
  • Take the warm milk to mix Saffron in it . Warm milk help to release the color of Saffron.
  • Add Saffron in it .
  • Rub it well in the milk
  • Take the Hung curd in a Bowl which is little deep and you can mix everything well.
  • Mix all the other ingredients: Sugar, saffron milk and Cardamom and then mix very well. There have to be no lumps.

You can see how I have served, I made it for my husband on his birthday because it is his favourite sweet. So I thought trying it out and it turned out super yummy.

Serve it With Puris preferably as we love that combination .
